Pesach Pancakes 1

For those needing something a little more filling and fun for Pesach/Passover breakfast

Ingredients

1 cup of milk

1 large egg

1/4 cup potato starch

1 1/4 cup almond flour

2 tablespoons of sugar

1 teaspoon baking powder

1 tablespoon oil

1/2 cup chocolate chips

Method

  1. Combine all the ingredients in a bowl. Oil a large frying pan. If you have non-stick spray, coat the pan well. Heat the pan on medium heat.
  2. When the pan is hot, drop 2 tablespoons (1/8th cup) per pancake into the hot pan, and allow to brown for about 2 minutes before turning.
  3. Cook for a further 1 1/2 minutes until evenly browned.

This recipe makes between 12 -16 pancakes.
