Delicious soup for winter!

15 mL Vegtable Oil
2 onions diced
5 mL mild curry powder If you like spicy then use a strong curry
2 litres chicken stock use cubes or powder or make your own
240 mL diced celery
240 mL diced carrots you can use frozen
2 chicken breasts diced
240 mL mayonnaise
480 mL cooked rice



Heat the onion in a pan and fry the onion until soft, Add the curry powder and mix well.

Add the chicken stock, celery, carrots and chicken and bring to the boil, reduc hear and simmer, uncovered for 10 minutes. Stir in the mayonnaise and rice. Pour into a wide-mouth flask and seal.
