45 ml margarine
2 onions sliced
1 kg butternut sliced
4 potatoes sliced
5 ml salt
15 ml curry powder
Water to cover
Melt the margarine in a heavy bottom pot and fry your onion with the curry powder until lightly brown.
Add the butternut, potatoes, and salt and cover with water, bring to boil and then simmer until potato and butternut are soft.
Liquidize or blend the soup till smooth.
Just before serving I like to add some cream/ cream substitute
