This is an easy recipe (even your kids can make it), low calorie and delicious. This recipe was adapted from the blog Lose weight by eating, by Audrey Johns.
1 potato per person
1/2 a traditional Fry’s sausages diced per potato
1/8 cup Greek yoghurt per potato or low oil Mayonnaise
1/4 cup strong cheddar cheese per potato cubed
extra cheese for topping
1/2 Jalapeno pepper or 1/4 bell pepper if you don’t like spicy
Hot sauce to taste (optional)
Get started:
Heat oven to 220 degrees.
Stab the potatoes a few times with a fork and cook in the microwave for 5-7 minutes until the potato is cooked through. While the potatoes cook, cube the cheddar into small pieces and slice the jalapeno removing all the seeds and the ribs (this will remove most of the heat). Or dice your bell peppers, I prefer yellow or red to the green, but any are fine.
Once the potato has cooled enough cut in half, length wise. Using a spoon, scoop the insides of your potato halves, into a medium bowl and mash the potato roughly. Keep the potato shells. Then add the yogurt, the cheese and the jalapeno or bell pepper and a little hot sauce and mix together.
Refill the potato shells with the mixture and top with grated cheese. Place potatoes on a baking tray in the oven for 10 minutes, when the cheese is melted and oozing out the sides the Stuffed Potatoes are ready. You can’t always get all the potato mix back into the shells even with mounding it on top, so I make balls and put them in the baking tray.
