Beef Stew

Ingredients
750gm stewing beef or chuck cut into pieces
1/4 cup flour
6 very ripe tomatoes diced
15 ml fresh basil chopped
5 ml fresh rosemary chopped
4 medium potatoes peeled and cut in 8ths
1 cup frozen peas and carrots
5 cups water
salt and pepper
Method
In a heavy pot toss the beef with flour. Stir in the tomatoes, basil and rosemary, about a tsp salt and 1/8 tsp pepper to taste, cook for about 15 minutes, add water and potatoes and cook till potatoes are almost soft. turn down the heat and simmer for 1 hour. Add peas and carrots and cook for a further 5-10 minutes. Turn off the heat and let stand for another 5 minutes before serving.
