Creamy Smoked Salmon and Pasta

Serves 6

750gm Giant Pasta Shells

1Tbs butter or 15mls oil

1-2 garlic cloves crushed

1 medium onion diced

Juice of 1 lemon or 2 tablespoons bought lemon juice

250gm of cream cheese (mixed with 15ml fresh cream-optional)

400gm smoked salmon off cuts.

Salt and black pepper to taste

Boil pasta in either salt water or I add a teaspoon of chicken stock powder, until al dente (soft but still holds its shape)

Melt the butter or heat the oil in a very large pot, one big enough to add the pasta to afterwards for mixing. Fry the onion and garlic until soft and glassy.

Mix in the lemon juice

Add your cream cheese. Mix well.

Add your pasta and mix well until the shells are coated. Serve with a green salad.
