Grilled Sole with Tomato Salsa

This is a Sea Harvest recipe.

4 Portions of sole

olive oil

Fish spice or spices of your choice

125 gm cherry or Italian tomatoes quatered

15 ml Honey

15 ml Wholegrain mustard

lemon juice

4 spring onions sliced

Fresh Coriander

METHOD

Brush your sole with olive oil and season to taste.

Chop a handful of Coriander leaves. Warm the olive oil and add the tomato, spring onion, honey, mustard, lemon juice and coriander into the warm oil and mix well.

Serve over your fish. I served it with a green salad and Basmati rice.
